gumbo

saute 1 package frozen okra, in oil, covered, for 1 hour.
stir occasionally.
add
1 chopped onion
3 stalks celery, chopped
1/4 c. chopped parsley
1 T. chopped garlic
saute until onions are clear
add 1/4 c. roux flour and stir
add 1/4 c. spaghetti sauce and stir
add
4-6 c. seafood stock
1.5 lb shrimp, peeled, uncooked
2 boiled crabs, or some lump crabmeat
season with salt, hot sauce, and soysauce to taste
cook for a very long time.

seafood stock: boil shrimp shells in water with salt+pepper
roux flour: cook white flour in a frying pan on low heat
until it turns brown but not burnt. also called a dry roux.

by request, my mother's current incarnation of gumbo.
